From the untamed landscape and wildlife to the classic homestead building and wrap-around deck, Saddles is an iconic Australian restaurant that has put Mount White on the map.   

Owner John Singleton set out to create a restaurant that showcases the natural beauty of Mount White, where he resided for more than 30 years. To bring his vision to life, Singleton engaged the acclaimed White + Dickson Architects and Interior Designer, Michelle Leslie, to design a building that seamlessly integrates with the surrounding flora and fauna.  

Since opening its doors in 2018, Saddles has been named one of the world’s most beautiful restaurants and has become an Australian landmark, loved by locals and travellers alike.

About the Head Chef

Head Chef Reece Collins brings a wealth of experience to Saddles, with a background that spans both the UK and Australia. Having worked at leading dining venues such as Le Pont de la Tour in London and Ayers Rock Resort, Collins has developed a versatile approach to cooking that balances innovation with a deep respect for ingredients.

Reece has been an essential part of the John Singleton Group, leading the kitchens at both The Railway Hotel Gosford and Saddles. With an eye for detail, Collins transforms every dish into a work of art.

Focusing on fresh and locally sourced produce, Collins continues to craft menus that celebrate the best of the region, offering guests a delightful blend of rustic charm and refined cuisine.
